Pizza night

This is a great dinner when you want to do the prep ahead and then finish at the last minute.  I had the topping assembled and the oven pre-heated so as soon as Keith walked in the door, I could put the topping on the crust, put it in the oven and voila, dinner in 10 minutes!  (If you put the topping on the crust early, the pizza gets soggy.)

  • Cooking spray
  • 1/2 lb sweet Italian turkey sausage, removed from casings
  • 1 onion, thinly sliced
  • 1 red pepper, finely chopped
  • 2 stalks celery, finely chopped
  • 1 cup tomato sauce
  • 1 TB Cajun seasoning
  • 1 pizza crust
  • 1/2 cup Mozzarella cheese

Preheat oven to 425.  Spray a non-stick pan with cooking spray.  Cook sausage until no longer pink (8-10 minutes).  Remove sausage from pan and place on a plate on top of paper towels.  Drain most of oil in pan and add veggies.  Cook until soft.  Add tomato sauce and Cajun seasoning and cook for 2 – 3 minutes.  Place on pizza crust and top with cheese when ready to bake.  Bake 8 – 10 minutes and serve.

More cooking ahead

I had a meeting after work tonight.  I made the topping for the pizza last night, Keith assembled and he and Samantha ate theirs and saved some for me.

  • 1 TB olive oil
  • 1/2 lb sweet Italian turkey sausage, removed from casings
  • 1 onion, thinly sliced
  • 1 red pepper, finely chopped
  • 2 stalks celery, finely chopped
  • 1 cup tomato sauce
  • 1 TB Cajun seasoning
  • 1 pizza crust
  • 1/2 cup Mozzarella cheese

Preheat oven to 425.  Heat olive oil in a non-stick pan over medium heat.  Add sausage and cook until done.  Remove sausage from pan.   Add onion, red pepper, and celery and saute for 3 – 5 minutes.  Add tomato sauce and Cajun seasoning.  Stir and add sausage.  Either refrigerate topping until ready to use or place on pizza crust and top with cheese.  Bake 8 – 10 minutes and serve.

Cajun pizza

This pizza is one of our favorites.  You can make the topping ahead and then put on the pizza crust just before you pop it into the oven.

  • 1 TB olive oil

  • 2 stalks celery, finely chopped
  • 1/2 lb sweet Italian turkey sausage, removed from casings
  • 1 cup tomato sauce
  • 1 TB Cajun seasoning
  • 1 pizza crust
  • 1/2 cup Mozzarella cheese

Preheat oven to 425.  Heat olive oil in a non-stick pan over medium heat.  Add onion slices and saute until soft.  Add red pepper and celery and saute for 3 – 5 minutes.  Add sausage and cook until sausage is cooked through.  Add sauce and seasoning and cook until well mixed.  Place on pizza crust and top with cheese.  Bake 8 – 10 minutes and serve.
