Here is the menu plan for the week:

Sunday

We are having a small dinner party to celebrate a friend’s retirement.  She requested crab and roasted cauliflower and roasted carrots.

Monday

Shrimp Saltimboca with polenta (similar to the pancetta shrimp and polenta, slightly different)

Tuesday

Crabcake sandwiches (leftover crabcakes) and black bean soup

Wednesday

Citrus-chili marinated pork tenderloin with sweet potato fries

Thursday

Chicken pizza with aioli

Our weekend away was fun but everyone is tired.  I have a church meeting after work tomorrow and after cooking for a houseful over the weekend, I’m ready for a simple week (and an abbreviated one.)

Grilled flank steak with store-bought mashed potatoes and salad

Pizza Amatriciana (I’m making the topping tonight so Keith and Samantha can assemble while I’m at my meeting tomorrow and hold some back for me.)

After a busy day of cooking to get ready for the party, I was ready to simplify a little bit.  Here is the menu plan for the week:

Sauteed oysters with Smithfield ham and roasted asparagus (because we have Smithfield ham left and this is easy)

Monday

Eggplant lasagna (because we have been doing such a good job of emptying the freezer that it is time to put some new things in)

Tuesday

Pizza with spicy chicken (because it’s easy and Samantha loves it)

Wednesday

Fish tacos (because I liked my lime coleslaw from the shrimp tacos so much that I want to have it again)

Saucy Sirloin over rice (because it’s in the freezer)
