NOTES: I went to the produce stand yesterday and they have great peppers, eggplant and zucchini and I have lots of fresh tomatoes from my garden so the ratatouille will be a nice way to use those.  There will be leftovers to use for lunch or as an additional side later in the week.  I have a pork tenderloin in the freezer that I need to cook and the leftovers make a terrific salad for later in the week with very little effort.  Tilapia is on sale this week so the fish tacos will taste good and be inexpensive.
