Here is the menu plan for the week:

Sunday

Chipotle marinated strip steaks and hash browns – this is one of my favorite marinades and makes extra.

Monday

Chicken with herbs and prosciutto and cous cous – I’m taking a very close look at cookbooks that don’t have tagged recipes.  If I can’t find something good, that cookbook is going.  This cookbook is just hanging on.

Tuesday

Watercress soup with seared scallops – this sounds so springy

Wednesday

Asian-style baby back ribs and salad with ginger dressing – something a little bit different

Thursday

Queso Fundido pizza – popular the first time we had it and easy

It is a rainy, gloomy day here in Baltimore.  I think tonight’s dinner will lift everyone’s spirits!

Leftover smorgasbord

We have been trying to do curbside pickup to help support some of our favorite restaurants.  On Saturday we ordered a family fried chicken meal that included enough Mac n Cheese for a family of 8.  It also included potato salad.  We have leftover potatoes and carrots from Easter.  I said to Keith we just need some more protein.  As it happened, yesterday was our celebration of Samantha’s adoption day.  We normally celebrate with a restaurant dinner so we adapted to curbside from Stony River Steakhouse.  Our 3 dinners provided enough leftover steak (in combination with some leftover fried chicken) to solve our protein need.  So tonight is a mix of leftovers.  After our eccentric dinner, I handed Samantha a pizza cookbook and Keith a salad cookbook.  So our next few nights look like this:

Menu plan week of 3/29

One of the benefits of working from home full-time is saving the commute time means more time for fixing dinners.  Our grocery store is pretty well stocked so I’m using this as a chance to try some new recipes.

In spite of the fact that tomorrow is a holiday, this is a hectic week.  Tonight we are getting carryout from a new Thai restaurant.  Will review it for my Baltimore friends.  That gave me the chance to cook ahead so I made the chicken chipotle chili for tomorrow night today.
