Grocery shopping in a pandemic

I’ve heard many people say (and I believe them), that we have enough food in this country and we are not going to starve.  Many of the people in the grocery store do not seem to believe this.  Last Saturday I went to our neighborhood Graul’s to get lamb chops for dinner.  Things seemed pretty typical.  On Sunday I went to get food for the week (like I normally do).  A man was yelling at a woman, accusing her of taking his cart to steal his food.  She was yelling back and saying she touched his cart by accident.  He yelled at her again, calling her “Crazy”.  This is our civilized neighborhood grocer!  There was hardly any meat, no paper goods – it was a madhouse.  By Tuesday, new deliveries had come in, shoppers were being limited to 2 packages of meat, and things were looking up.

I’m trying to be sensible about stocking up without stockpiling.  So I bought a whole chicken for tonight and since we aren’t going anywhere (all working from home), we will have plenty of time to make chicken stock for freezing for future soups.  I did make a chicken/pesto lasagna, let it cool and then froze the pieces on a baking sheet.  They can then be frozen in plastic bags without sticking together.

A few suggestions for things to stock up on for future dinners:

  • Hoisin pork – I have a pork tenderloin in the freezer (they come two to a pack and we only eat one).  I bought a jar of hoisin sauce and I always have honey, sherry and sesame oil on hand.  We can have that with asparagus or sweet potatoes or cous cous if we can’t get out for fresh vegetables
  • Italian sausage – I bought a pound of sweet Italian sausage and froze it.  I have a pizza crust in the freezer, I have some canned tomato sauce on hand, I have pasta.  There are lots of things we can do with Italian sausage.
  • Pizza crust – ditto on the above.  If we can get out for fresh veggies, we can make something healthier, but if we can’t we can use canned vegetables (I love artichoke hearts on pizza), cheese from the freezer or Aidell’s sausages.
  • Speaking of Aidell’s sausages, they are a very handy thing to keep in the freezer.  You can use them on pizza, toss them with pasta or serve on sauerkraut.
  • Frozen pie crust – Quiche only requires milk, eggs and cheese.  I have all of those on hand currently.
  • Speaking of eggs, you can always fix omelettes for a fritatta for dinner.
  • Frozen shrimp – we love shrimp and typically eat it once a week.  I bought a 2 pound bag of frozen shrimp which for us is good for 3 dinners (Samantha doesn’t like it.)  I can serve with rice, pasta, cous cous, quesadillas, etc.  A good thing to have on hand if we can’t go out for a bit.
  • Fresh raviolis – there are so many good raviolis available in the store.  These can also be frozen.  (We still have some pumpkin raviolis on hand if we get desperate.)
  • Ingredients for your favorite soup.  We made a batch of the Cream of Maryland crab soup yesterday (search blog for recipe).  It isn’t hard, makes a lot and freezes well.  I also got ingredients for the cauliflower soup which we all love and the oyster stew for Wednesday’s dinner.
  • Baking supplies – there is something about being cooped up inside that inspires baking.   Samantha made macarons last weekend and I just took homemade gingerbread in the oven (it smells so good!).  It makes 2 8 inch rounds.  I plan to cut each one into quarters and freeze so we can space out our treats and not get fat from sitting around!

Remember that you don’t have to strip the shelves bare.  The recommendation I keep seeing is shop half as often and buy twice as much.  Be safe and hope that gives you some ideas for feeding your family in these challenging times!
