Menu Plans – subject to change!

We had a family picnic on Sunday night and I was busy.  Did not have a chance to update blog.  The menu plan for the week was originally, as follows:

Sunday

Mexican shrimp cocktail and guacamole

Grilled chicken with slaw, hamburgers, potato salad, deviled eggs

Congo squares

Monday

Caprese salad with fried green tomatoes

Tuesday

Hoisin pork, cous cous and grilled asparagus

Wednesday

Spicy chicken pizza

Thursday

Grilled shrimp and summer squash

We had a lot of leftover chicken so we ended up having leftovers on Monday night (I was planning to use green tomatoes from my garden anyway.)  Samantha is taking a virtual baking campl this week and made homemade pizza dough today.  There is leftover so it made sense to swap and make the spicy chicken pizza on the homemade crust.  So we will have the hoisin pork tomorrow and then decide what to have on Thursday.  If you start with a plan and have most or all of the ingredients, you have the flexibility to switch things around without resorting to eating out.
