Menu plan for week of 1/26

After a busy day of cooking to get ready for the party, I was ready to simplify a little bit.  Here is the menu plan for the week:


Sauteed oysters with Smithfield ham and roasted asparagus (because we have Smithfield ham left and this is easy)


Eggplant lasagna (because we have been doing such a good job of emptying the freezer that it is time to put some new things in)


Pizza with spicy chicken (because it’s easy and Samantha loves it)


Fish tacos (because I liked my lime coleslaw from the shrimp tacos so much that I want to have it again)


Saucy Sirloin over rice (because it’s in the freezer)
