Pantry cleanup

One of my projects over the Christmas vacation was to clean out our pantry.  (I call it a pantry but it is really a big corner cupboard with a two story Lazy Susan.)  The problem with it is that you see the things that are on the edges that you use all the time but things work their way toward the middle and hide there.  Then you forget about them.

So we took EVERYTHING out of the cupboard.  We checked the expiration dates which meant throwing away so much stuff that our trash weighed a ton.  (I know you can flirt with them but when the expiration date was 2011, I think it’s best not to take a chance!)  It also gave us a chance to see some things that were not expired that should be used.  One of them was a jar of Williams Sonoma Tikka Masala sauce.  I cut up some boneless, skinless chicken breasts, dumped the sauce on top, simmered it and served it over leftover rice from last night.  It was excellent.  It was easy.  Not for every night but good for the occasional night.

It’s helpful to have a few things like that on hand for when you need an easy night.  It’s just better when you remember that you have them!
