Dinner in 5 minutes

Tonight was crazy.  We’ve had a lot of rain and it took me 2 hours to get home from work.  I walked in at 6:25 and Keith had to leave at 6:45.  Fortunately, I had planned a quick and easy dinner.  I saw someone make this vinaigrette on a morning tv show a few years ago and the idea stuck in my head.  It is fast, healthy and delicious – what a combination.

Seared scallops with tomato vinaigrette

  • 3 – 4 scallops per person, washed, dried and brushed with olive oil, salt and pepper
  • 1 tomato
  • 1 TB sherry vinegar
  • 3 TB olive oil

Heat a heavy pan over medium high heat.  When hot, add scallops to pan and sear for 2 -3 minutes a side.  (You can also grill the scallops but since it’s pouring here, I thought indoor made more sense.)

Using a box grater, grate the tomato into a bowl.  Whisk in vinegar and then slowly whisk in olive oil.  Spoon sauce over scallops.  We had this with cous cous and Keith got out the door in time.
