Beach eating

We were at the beach last week.  Our vacation was a bit challenging as my daughter (who is almost 10) sliced open two of her toes at our neighbor’s pool the night before we left.  That meant 13 stitches and no immersion in water (like for example, the ocean) for 7 – 10 days.  When you are almost 10 and have been literally counting down the days to your beach vacation and you can’t go in the water, you aren’t very happy.  We did our best to distract her with shopping, rides, a movie, miniature golf, etc. but it was a tough week.  Of course, we still had to eat.  We went out twice and kept things pretty simple.  Here were my beach menus:

Friday 

Crab cakes with sliced tomatoes

Saturday

Grilled scallops with pesto (brought the homemade pesto from home) grilled asparagus and cous cous

Sunday

Grilled steaks, roasted potatoes (Little potato company in a package) and salad

Tuesday

Thai shrimp curry (brought the curry paste and coconut milk from home and bought the fresh shrimp at the beach) with rice

Thursday

Crab salad with cooked shrimp, hard-boiled eggs and avocado

These meals allowed us to take advantage of the fresh seafood, kept me from spending my vacation in the kitchen and allowed us to enjoy great food on vacation!
