Avoiding waste again

Yesterday I wrote about finding recipes that use items in the fridge.  This summer pasta with fresh tomatoes is one of my favorites when the weather is hot.  I usually make it with fresh mozzarella but I saw a recipe for pasta with brie and had some leftover brie in the cheese drawer so thought I’d switch it up.  Although I love brie, I think I actually like the pasta dish better with the fresh mozzarella but it’s obviously adaptable to what you have on hand.

Pasta with fresh tomatoes and basil (Quantities are for 2 people)

  • Pasta of your choice, use package to determine appropriate portion per person
  • 1 large fresh tomato, chopped (I used a few smaller ones of different varieties)
  • 2 TB olive oil
  • 4- 6 fresh basil leaves
  • fresh ground pepper
  • 2 oz brie, chopped (or fresh Mozzarella – or whatever else you think of!)
  • fresh grated Parmesan cheese
Cook pasta according to package directions.  In a large serving bowl, toss tomato with olive oil, cheese and basil.  Top with pepper.  Drain pasta and toss with tomato mixture.   Top with fresh grated Parmesan.
