Grilled scallops

Keith loves to grill and we enjoy a lot of food off the grill.  He also loves scallops but until recently, he had resisted grilling them.  We made a recipe not too long ago and loved the flavor so I’ve been looking for more inspiration.  Since it was a weeknight, this was served with a packaged risotto.  It would also be good with cous cous or rice.

Grilled scallops with lemon sauce

  • 3 – 4 sea scallops per person
  • 1 clove minced garlic
  • 1/4 tsp grated lemon zest
  • juice from 1/2 lemon
  • 1/4 cup olive oil
  • 1 tsp oregano

Combine garlic with lemon zest and juice.  Slowly add olive oil, whisking constantly.  Add oregano.

Rinse scallops and dry thoroughly with paper towels.  Brush with olive oil and season with salt and pepper.  Grill, turning once about 2 minutes a side.  Remove from grill.  Serve with sauce.

NOTE: My original preparation used more lemon zest and more lemon juice.  While we both love lemon, we thought it was too lemony so I’ve toned it down a bit in this version.  Adapt to your liking.  These grilled scallops would also be great with the pesto that I made.
