More new sides

Tonight we had grilled lamb chops (a favorite of ours) with two new side dishes.  I’m trying to add more veggies to our plates so we get full on healthier stuff.  I figured that I was safe experimenting with two new sides because the odds were good that we would like one of them – we loved them both.  Two new sides, two healthy sides, two do-overs!

Garlic smashed potatoes

These potatoes were adapted from a recipe in Eating Well magazine.  Delicious and healthy with no butter or milk!

  • 20 oz small potatoes, washed and halved
  • 2 TB olive oil
  • 1 clove minced garlic
  • 2 tsp minced rosemary
  • salt and pepper

Preheat oven to 425 and put a ceramic baking dish in the oven to preheat.  Steam potatoes in a steamer over boiling water for 10 – 12 minutes until tender.  Drain.  Remove baking dish from oven and drizzle with olive oil.  Put potatoes in baking dish, skin sides down and mash firmly with a fork.  Mix remaining olive oil with garlic, rosemary, salt and pepper in a small bowl.  Pour over potatoes and return to oven for 20 minutes.  Serve hot.

Caramelized onion and tomatoes

  • 2 onions, skin removed and sliced thin
  • 1 tsp olive oil
  • 1 tsp sugar
  • 1 28 oz can fire roasted diced tomatoes (including juice)
  • 1 tsp balsamic vinegar
  • 1 tsp chili powder

In a nonstick skillet, saute onions in olive oil until soft and golden (about 5  – 7 minutes.)  Add sugar and cook another 2 minutes to caramelize.  Add tomatoes and cook over high heat until thickened.  Add vinegar and chili powder and serve hot.
