Menu plan for week of 1/3

Happy New Year!  I meant to blog last weekend but was not able to.  Goals for 2016 are to keep up with blog and try more new recipes (and healthy ones!)  Here is the menu plan for the week:


Roasted chicken and roasted butternut squash (because we need to make chicken stock and we’re trying something new with the squash)


Grilled lamb chops with caramelized onion and tomato and garlic rosemary smashed potatoes (because we love lamb chops and we’re trying something new with the vegetables)


Jambalaya (because we made a fabulous jambalaya on Saturday with Smithfield ham leftover from Christmas and chicken and sausage – can’t wait to share the recipe with you!)


Grilled salmon and spinach salad (because we need a light night)


Pizza with eggplant, roasted peppers and Fontina cheese (because we need a pizza night too!)
