Summer Sundays

In the winter I don’t mind hanging out and cooking on Sunday afternoons.  In the summer, I feel differently.  If the weather is nice, I want to spend the afternoon playing golf or tennis or hanging by the pool, not in the kitchen.  We had steaks in the freezer to grill, I baked a sweet potato to split and we added a salad.  The tomatoes in the salad came from our garden, I got some mache and a ripe avocado at the store.  I make the dressing with olive oil, sherry vinegar and shallot often – tonight I wanted something different so I went with a red wine vinaigrette:

Red wine Dijon Vinaigrette

  • 1/2 cup olive oil
  • 1/8 cup red wine vinegar
  • 1 TB Dijon mustard
  • 1 egg
  • 1/4 tsp oregano
  • fresh ground pepper

Combine in a blender.  Use on almost any salad.
