Lobster fest

For those of my follower friends in Baltimore, our neighborhood grocer Graul’s is featuring lobsters on sale every Friday in June – $7.99 a pound.  They’ll steam them, crack the claws and tail so all you have to do is eat them.  Although we love them steamed and dunked in butter, we also love them as lobster rolls.  Last night we played in a tennis mixer and we knew we would be ready for something cool and delicious afterwards.  Here is my take on a lobster roll:

Lobster rolls (for two)

  • meat from 2 pound and a half cooked lobsters, roughly chopped
  • 2 – 3 TB mayonnaise
  • 1 stalk celery, finely chopped
  • 1/2 tsp Worcestershire sauce
  • dash Paprika
  • dash Old Bay
  • 1 tsp lemon juice
  • 2 hot dog buns
  • 2 tsp butter

Combine lobster meat with mayo, celery and seasonings.  Butter hot dog buns and heat until butter is melted.  Mound lobster salad in hot dog buns and serve.  Delicious with a little tomato cappers on the side.  You can also substitute shrimp or crab for the lobster.
