Summer Sunday dinner

This weekend our local grocer (Graul’s) was having their Fight against Cancer day.  They had beef tenderloin on sale at a great price so I bought one and had it cut up into steaks.  We’re having steaks on the grill tonight.  I was looking up a recipe on the blog and stumbled onto the ranch dressing grilled chicken that I made last year.  It was so good that I wanted to put it on the menu plan for the week.  We’ll have sliced tomatoes with the ranch dressing.

Ranch dressing

  • 3 chopped scallions, white and green part
  • 1/2 cup chopped mixed herbs (I used a combination of basil, chives and dill)
  • juice of 1 lemon
  • 1 1/2 TB Dijon mustard
  • 1 TB olive oil
  • 2 chopped garlic cloves
  • 1/2 tsp salt
  • 2 tsp ground pepper
  • 1 cup mayonnaise
  • 1/2 low fat Greek yogurt
  • 1/2 cup buttermilk

Combine scallions, herbs, lemon juice, mustard, olive oil, garlic, salt and pepper in a food processor and puree until smooth.  Add mayo, yogurt and buttermilk and blend until well mixed.  Refrigerate until ready to use.

I’ve also been craving the sweet potato fries.  They are quick to whip up.  We’re heading out shortly for tennis and some time by the pool.  It will be nice to come home to a quick and easy dinner.

Oven baked sweet potato fries

  • 2 – 3 sweet potatoes cut into strips
  • 2 TB olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp dried chipotle pepper

Preheat oven to 450.  Toss potato strips with all other ingredients and spread out on a sheet pan lined with foil.  Bake 25 – 30 minutes stirring halfway through.  NOTE: You can tweak the seasonings to suit your tastes.  I like the chipotle pepper on the sweet potatoes.
