Shrimp Fra Diavolo

I haven’t made this in a long time but it is a delicious and easy sauce that freezes well.  Tonight I roasted some shrimp with olive oil, salt and pepper (8 – 9 minutes at 425) and then sliced the shrimp in half and added them to the sauce.  Delicious!  If you aren’t feeling ambitious you could always buy the sauce – Rao’s has an excellent line of gourmet flavored pasta sauces.

Fra Diavolo Sauce

  • 2 tsp olive oil
  • 1/2 tsp crushed red pepper
  • 3 oz pancetta, diced
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 2 cups of tomato or marinara sauce (my grocery store makes their own, I got one cup of each and will mix together)

In a heavy skillet over medium heat, brown pancetta in olive oil until crispy.  Add shallots and garlic and brown for about 2 minutes.  Add tomato sauce and red pepper flakes and simmer.

When ready to serve, add roasted shrimp to sauce and heat for a minute, stirring so shrimp are coated with sauce.  Pour sauce over drained pasta and top with grated Parmesan cheese.  This would also be good with chicken.
