Sausage Pizza

When you saw this on the menu plan, you probably thought I had lost my mind (or at least lost any interest in healthy eating.)  In fact, this sausage pizza is a healthy take on your high fat favorite.  Here is what I did:

  • 1 TB olive oil
  • 1 onion, thinly sliced
  • 1 red pepper, finely chopped
  • 2 stalks celery, finely chopped
  • 1/2 lb sweet Italian turkey sausage, removed from casings
  • 1/2 cup tomato sauce
  • 1 TB Cajun seasoning
  • 1 pizza crust
  • 1/2 cup Mozzarella cheese

Preheat oven to 450.  Heat olive oil in a non-stick pan over medium heat.  Add onion slices and saute until soft.  Add red pepper and celery and saute for 3 – 5 minutes.  Add sausage and cook until sausage is cooked through.  Add sauce and seasoning and cook until well mixed.  Place on pizza crust and top with cheese.  Bake 8 – 10 minutes and serve.
