Saturday night dinner

We had company for dinner last night and made grilled lamb chops, spinach sautéed with garlic and roasted potatoes with garlic.  I remembered a feta sauce that I made a while back and served with lamb and potatoes.  Found the recipe on the blog and made it again.  It is so good with both the lamb and the potatoes.  (Lamb chops were just marinated in Worcestershire and grilled.)

Feta sauce

  • 1 small container plain loft yogurt (I used Greek yogurt but go with your favorite)
  • 3 oz feta cheese
  • 1 TB lemon juice
  • 1 clove garlic, minced

Combine all ingredients and mix well.  Refrigerate until ready to serve.

Roasted garlic potatoes

  • 1 small bag of mixed small potatoes, rinsed and quartered
  • 1 tsp thyme
  • salt and pepper to taste
  • 7 – 9 cloves garlic, halved
  • 2 Tb olive oil

Scrub potatoes and toss in a bowl with remaining ingredients until all are well coated.  Preheat oven to 400.  Spread potatoes out in a ceramic baking dish and roast for 40 minutes, stirring once midway.
