Shrimp and black bean salad

I found a recipe that included two of my favorite things – shrimp and black beans.  While I love them in the quesadilla I make with cheese and sour cream and all the yummy fixings, that is probably not the lowest calorie combination.  I tweaked the recipe a bit and here is what I came up with:

Shrimp and Black Bean Salad


  • 1/4 cup olive oil
  • 2 TB white wine vinegar
  • 1 TB pureed chipotle pepper in adobo sauce
  • 1 tsp cumin
  • 1/4 tsp salt

Whisk all ingredients together.


  • 3/4 pound shrimp, peeled, deveined and halved and roasted with olive oil, salt and pepper at 425 for about 7 – 9 minutes
  • 1 package cherry tomatoes, rinsed and halved
  • 1 red pepper, chopped
  • 1 can black beans, rinsed and drained
  • 4 scallions, chopped

Combine all salad ingredients in a bowl and toss with dressing.  Serve.

I didn’t have any ripe avocado but next time I would try to have some on hand and add in.
