New Year’s Eve update

We usually stay in for New Year’s Eve and since Santa usually brings me a new cookbook (or 2!) for Christmas, it is fun to fix something new.  Keith gave me a beautiful book called Pok Pok for Christmas.  It is written by a guy who traveled extensively in Thailand for 20 years and now owns and operates 6 Thai restaurants.  The book combines stories about his travels and the people he met with authentic recipes.  I picked the roasted chicken with two dipping sauces (although I ended up running out of steam and only made one of them).   The book’s author tells about the man who taught him to make the roast chicken – he estimates that he has made 600,000 of them.  Christie made spring rolls for appetizer and we had drunken noodles with vegetables along with the chicken.  Here is a picture of the chicken and noodles:

The preparation of the chicken involved brining the bird overnight in a mixture of water, salt, sugar, lemongrass, ginger, garlic and pepper.  Then the brine was discarded and the bird’s cavity was stuffed with lemongrass and lots of garlic (almost 2 whole heads).  After drying out in the fridge with the stuffing, it was marinated with fish sauce and soy sauce.  Two hours later it was roasted and midway through roasting it was brushed – first with oil that shallots had been fried in and then with honey.  As you can imagine with all of those steps, the layers of flavor in the chicken were really intense.  I made the sweet chili dipping sauce which turned out very well and next time I will get to the tamarind sauce as well.

Dessert involved another Christmas present.  Christie gave me the Thai sticky rice cooker – see photo below:

We made sticky rice with mangos and it was delicious.  The sticky rice is mixed with coconut milk and sugar and the tart mangos and the sweet coconut cream go so well together.  It was a fun evening and a great continuation of a fun tradition – missed Kevin and Jack who were at a lacrosse tournament but texted them a picture of dinner so they knew what they were missing.
