Recreated quiche

One of the highlights of our trip to Disney World was our breakfast with the princesses.  The breakfast is in Cinderella’s castle in the Magic Kingdom.  It was extremely well organized.  First you get your picture taken with Cinderella and then you are taken into a lovely room with a high ceiling, big chandelier and stained glass windows.  The breakfast was one of our most expensive meals but it was very good.  They brought a tray of pastries, juice, coffee and your choice of some really exceptional breakfast entrees.  Keith had steak and eggs but could have gone for the lobster crepes.  I chose the baked arugula, goat cheese and mushroom quiche.  It was so good that I wanted to reproduce it.  I think I came very close and I loved the result!  Here is what I did:

Goat cheese, arugula and mushroom quiche

  • 1 package mushrooms, cleaned, stemmed and sliced
  • 1 TB butter
  • 1 1/2 cups arugula
  • 1 frozen pie crust
  • 4 oz goat cheese
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup half and half

Saute mushrooms with butter over medium heat until they have given off their juice and juices have cooked off.  Add arugula and wilt.   Remove from heat.

Defrost frozen pie crust and poke holes in crust with a fork.  Spread half of the goat cheese in the crust.  Top with arugula/mushroom mixture.  Beat eggs with milk and half and half.  Pour over ingredients and add remaining goat cheese.  Bake at 425 for about 25 – 30 minutes or until set.
