Productive weekend

We’ve had a productive weekend on several fronts.  Keith has been working on putting things from the deck into winter storage, Samantha and I worked on cleaning up her room and I’m doing the switch of summer and winter clothes.  We also completed Samantha’s project for school which involved decorating a plastic pumpkin to look like a character from a book.  Behold Scaredy Squirrel!

It was also productive on the cooking front.  Keith made corn chowder on Friday night and I roasted a chicken last night so we could make chicken stock today.  That also means soup and sandwiches for dinner tomorrow night.  Here is the corn chowder recipe.  It is delicious!

Corn chowder

  • 4 oz chopped bacon
  • 1/8 cup olive oil
  • 2 large onions, chopped
  • 2 TB butter
  • 1/4 cup flour
  • 1/4 tsp turmeric
  • 6 cups chicken stock (we used half homemade and half storebought since it has been a while since I roasted a chicken)
  • 3 cups small white boiling potatoes, unpeeled and chopped
  • 5 cups of corn kernels
  • 1 cup half and half

Cook bacon and olive oil in a stockpot over medium-high heat until the bacon is crisp.  Remove bacon with a slotted spoon and reserve.  Reduce heat and add onions and butter and cook until onions are translucent.

Stir in flour and turmeric and cook for 3 minutes.  Add chicken stock and potatoes and bring to a boil.  Simmer for about 15 minutes or until potatoes are tender.  Add corn and half and half and cook for 5 more minutes.  Add reserved bacon and taste.  Add salt and pepper if needed.  Serve plain or with grated cheddar cheese.
