Shopping the circular

As I’m planning my menus I always look at the Graul’s circular.  I try to incorporate whatever they are featuring on sale.  I noticed that lobsters were on sale this week so I ordered two steamed and cracked earlier this week.  Tonight I picked them up and that made assembling the lobster salad a quick and easy dinner.  And so delicious!  When I made these earlier in the summer we enjoyed them with sliced tomatoes – the time for those is past so I got some creamed spinach from Graul’s prepared foods.  Slightly eccentric as a side dish with the lobster rolls but so delicious we didn’t care!

Lobster rolls (for two)

  • meat from 2 pound and a half cooked lobsters, roughly chopped
  • 2 – 3 TB mayonnaise
  • 1 stalk celery, finely chopped
  • 1/2 tsp Worcestershire sauce
  • dash Paprika
  • dash Old Bay
  • 1 tsp lemon juice
  • 2 hot dog buns
  • 2 tsp butter

Combine lobster meat with mayo, celery and seasonings.  Butter hot dog buns and heat until butter is melted.  Mound lobster salad in hot dog buns and serve.
