Pizza night

After all of that cooking over the weekend, I was ready for a simple dinner.  I had planned on pizza with arugula, goat cheese and shrimp.  Since I had some extra Serrano ham, I decided to throw it on too.  It was delicious.  That is one of the things I love about pizzas – it is a great way to use up odd leftovers.  Here is what I did:

Pizza with shrimp, arugula, goat cheese and Serrano ham

  • 1 pizza shell
  • 2 – 3 TB tomato sauce
  • 1/3 cup shredded Mozzarella
  • 1 cup arugula
  • 2/3 lb shrimp, peeled and deveined
  • small amount olive oil
  • 2 oz goat cheese
  • 3 – 4 slices Serrano ham, cut in thin strips

Toss shrimp with olive oil, salt and pepper.  Cook at 400 for about 8 minutes.  Cut in half lengthwise.

Top pizza shell with tomato sauce, mozzarella, arugula, shrimp, ham and goat cheese.  Bake at 450 for 10 minutes.

    Once again great job. I adore ItalAN EVERYTHING but standard pizza got really old on me after a) the first forty years and b) the irresistible tomato and sausage sin the office ordered for any and all every Friday w medium heavy crust. You gotta love it but ultimately one gets antsy. Your assorted different ways to attack the general plan of a crust with goodies is most welcome.
