Brunch – it’s for dinner

Tonight we had a smoked salmon frittata with leftover Bloody Mary tomato salad.   Both of these are new recipes (the tomato salad leftover from last night.)  It was a great dinner and would also make a wonderful brunch menu.  Here is what I did for the frittata – you could easily adjust the portions for more people.

Smoked salmon frittata for two

  • 1 TB butter
  • 1 large shallot minced
  • 5 – 6 eggs
  • 1 TB water
  • 2 oz crumbled goat cheese
  • 1 tsp dill
  • 1/2 tsp ground pepper
  • 4 – 6 oz smoked salmon chopped

Preheat oven to 350.  In an oven proof pan, heat butter over medium heat.  Saute shallots 3 – 5 minutes until soft.

In a bowl, whisk together eggs and water until fluffy.  Whisk in goat cheese, dill, pepper and salmon.  Pour over eggs.  Put pan in oven and bake for 15 – 20 minutes or until a toothpick inserted in middle comes out clean.  (If you increase portions for more people, extend cooking time.)

This was great with the leftover tomato salad.  Things were too hectic last night to get pictures.  Here is a picture of the frittata and the Bloody Mary tomato salad.
