New variations

Lamb chops and zucchini aren’t new additions to our menu but tonight I experimented with some different preparations.  Reviews were mixed – Keith said he likes the lamb chops just as well marinated in Worcestershire sauce but he loved the zucchini.  It’s always good to try something new.

Grilled lamb chops with herb butter

  • lamb chops (I did one rib and one loin each)
  • olive oil
  • salt and pepper
  • 4 TB butter, softened
  • 1 clove garlic minced
  • 1 TB fresh herbs minced (I used mostly marjoram but a little rosemary also)
  • 1/2 tsp lemon juice

Toss lamb chops with olive oil, salt and pepper.  Marinate until ready to grill.

Combine butter with garlic, herbs and lemon juice.  Roll up in plastic wrap and chill.  Grill chops to desired doneness and top each chop with a slice of herb butter.  Cover with aluminum foil for a few minutes and serve.

Zucchini gratin

  • 3 – 4 zucchini (I used 4 small ones), sliced thin
  • 3 TB olive oil
  • 2 cloves garlic minced
  • 1 TB fresh herbs minced (I used basil, thyme, marjoram and oregano)
  • 1/2 cup panko
  • 1/2 cup grated Parmesan cheese

Heat oven to 450.  In a gratin dish, toss zucchini with 2 TB of olive oil, garlic and herbs.  Bake for 15 minutes.  Combine panko, cheese and remaining TB of olive oil and spread on zucchini.  Return to oven for an additional 15 minutes.  Delicious and you could easily substitute any herbs you have on hand – fresh or dried.  This one is a definite do-over!

    Zucchini recipe looks delicious and worth a try on a zucchini refuser who recently tried it when I drowned it in lemon and pepper. Apparently patience works for old dogs attempting new tricks – dog in question agreed to zucchini t age 79 after a life of no way zucchini. I now suspect your more interesting recipe may be a winner. Might even help Mrs b. get broccoli into George Sr.
