Orzo with shrimp and feta

Orzo 

This is delicious and not hard to make.  (It would make a good vacation meal.)  The quantities below will serve 4 – I’m halving but I’m going to use the full amount of tomatoes.

  • 12 oz uncooked orzo
  • 2 tsp olive oil
  • 1 small onion, chopped
  • 1 red pepper, chopped (optional)
  • 2 cloves garlic, finely chopped
  • 1 28 oz can diced tomatoes
  • 1 tsp oregano
  • 1 1/2 lbs shrimp (peeled and deveined)
  • 1/4 cup fresh basil, roughly chopped
  • 2 TB crumbled feta cheese

Cook orzo based on package instructions.  Drain.  Heat oil over medium heat and add onion, pepper and garlic.  Cook about 3 minutes.  Add tomatoes and oregano and simmer.  Add shrimp and heat until shrimp are opaque and cooked through.

Combine cooked orzo and shrimp mixture.  Stir in basil.  Serve orzo shrimp and top each serving with feta cheese.
