Summer soup and sandwich combo

We had a great dinner tonight – gazpacho and grilled vegetable, arugula, mozzarella sandwiches.  I made the gazpacho last night and it is so yummy.  When we grilled the vegetables on Sunday we grilled some extras.  That made tonight’s dinner easy to pull together – another good one for nights when everyone is on a different schedule.  Here is the recipe:

Grilled vegetable, arugula and mozzarella sandwiches

  • Bread (Keith had his on Semolina batard and I had mine on Olive)
  • mayo
  • leftover grilled vegetables (zucchini, eggplant, pepper and onion)
  • arugula
  • fresh Mozzarella sliced thin

Toast bread.  Spread lightly with mayo and top with arugula, vegetables and Mozzarella.  Serve open faced.  Doesn’t that look delicious?
