Sunday night grill night

Tonight we had grilled Porterhouse steak and grilled ratatouille.  The steak (which was on sale) was marinated in Worcestershire sauce and then grilled.  We like Porterhouse because we each get some strip steak and some filet.  I remembered a grilled ratatouille recipe that I hadn’t made in a while.  It was excellent.  I used some of my basil flavored olive oil and I think it made it even better.  I saved some of the grilled veggies to have on our sandwiches later in the week.

Grilled Ratatouille

  • 1 eggplant, cut in 1/2 inch slices
  • 1 red onion, cut in 1/2 inch slices
  • 2 zucchini, cut in 1/2 lengthwise
  • 1 red pepper, cut in rings
  • 1 yellow pepper cut in rings
  • 1/2 cup olive oil
  • 1 tomato, chopped
  • 3 TB white wine vinegar
  • 1 clove garlic, minced
  • fresh basil
  • fresh parsley
Brush vegetables (except tomato) with 1/4 cup of olive oil and grill about 10 – 12 minutes.  Let cool and cut in bite size pieces.  Whisk together remaining olive oil, white wine vinegar, garlic and herbs and season to taste with salt and pepper.  Toss grilled vegetables and chopped tomato with dressing and serve.  Delicious and healthy!
