Menu plan week of 7/14 – Summer cooking

We were talking after our tennis game the other night and one of my friends said that she really hated cooking in the summer.  When you have been to work all day and then tried to squeeze in a tennis game or some time at the pool, it can be hard to face coming home and fixing something.  I’m going to try to help address that this week.  The grilled ratatouille that we have with our steak tonight will provide leftovers for easy open-faced sandwiches on Wednesday.  The sundried tomato chicken pasta salad is the type of thing you can make, refrigerate and eat lunches and dinners from all week long.  The crab rolls are quick to fix and cool to eat.  And I’m mixing up a batch of gazpacho with goodies from the produce stand.  It’s a nice side with sandwiches or you can add a few cooked shrimp or some crab meat and make that a meal.  Here is the menu plan:


Grilled Porterhouse steaks (on sale at Graul’s), grilled ratatouille and salaad


Sundried tomato chicken pasta salad


Fish tacos


Arugula, ratatouille and mozzarella sandwiches


Crab rolls and gazpacho
