Never been to Spain

Remember the song, Never been to Spain.  My daughter’s class is doing a pretend trip to Spain tomorrow.  That means they need real Spanish snacks.  After a little research we made magdalenas – little Spanish cakes.  (I saw lots of yummy ideas in my tapas cookbooks but not many that are going to appeal to 5 and 6 year olds.)  The magdalenas weren’t hard and they are actually quite tasty.

Magdalenas

  • 4 eggs
  • 3/4 cup granulated sugar plus additional for topping cakes
  • 1 4 oz. stick unsalted butter
  • 1 2/3 cups unbleached white flour
  • 1 Tbsp baking powder
  • zest from 1 lemon
  • 1 Tbsp milk

Preheat the oven to 375F.

Using a mixer, beat eggs with sugar until light.  Meanwhile, melt butter in a small pan over low heat.  Cool slightly and then gradually add to egg mixture, mixing thoroughly.  Add lemon zest and milk and beat to combine.

Stir flour and baking powder together in a separate bowl and then beat in with egg mixture.  Batter will be thick.

Line  a  mini cupcake pan with paper liners and spoon batter into cups, filling each half full.  Sprinkle tops with reserved sugar and bake about 11 – 12 minutes until lightly browned and set.  Cool and serve.

  1. These look so easy and fun to make! I definitely will try to make these this weekend for my boyfriends son! Such a great idea to make for a school project. 😀
