“Egg” Salad

I wanted something different tonight and decided on a variation of a classic French salad.  It was delicious and convenient because my daughter loves poached eggs (she skipped the salad).  You could add other ingredients if you like but here is what I went with:

Salad with egg

  • salad greens (I used mache)
  • 1 small shallot, minced
  • 1 TB sherry vinegar
  • 4 TB good olive oil
  • 1/2 tsp Dijon mustard
  • 2 poached eggs per person
  • toast

Rinse greens and place on plate.  Put shallot, vinegar, olive oil and mustard in a jar and shake well to combine.  Poach eggs to desired doneness (I like mine a bit runny – about 4 minutes in simmering water.  My daughter likes hers cooked solid – about 8 minutes in simmering water.)  Pour dressing over greens and top with eggs and toast.  (Bacon would be good on this but I decided I didn’t need it.)
