The bounty of the freezer

This week is one of those crazy ones where schedules don’t mesh that well.  Last night I had a paddle tennis game at 6:00 and my husband had one at 7:45.  Tonight he has some place to be at 6:15 and tomorrow I have something at 7:30.  Weeks like this make the investment in freezing well worth it.  Last night we enjoyed chili and tonight is my homemade ravioli.  Winter weekends are the perfect time to get ahead by making soup, stew, a casserole or just doubling your favorite entree so there is a portion for another day.  I read something recently about cooking more to get ahead – not more often but increasing the quantity so you could freeze the additional amount.  Here are a few things you can find on blog that I have frozen with great results:

  • chili (beef, chicken, turkey or chicken chipotle)
  • chicken with pesto and sundried tomatoes
  • corn chowder
  • lasagna (standard, veggie or seafood)
  • California chicken casserole (freeze without avocado)
  • Dijon pork
  • beef stew
  • pasta sauce
  • homemade ravioli (or purchased fresh ravioli if you don’t want to make homemade)
  • split pea soup

Choose a favorite and make something this weekend and then when you have a crazy week, you’ll be able to eat well with very little effort!
