A happy accident

I have made this recipe before and it is very delicious and good for you.  Tonight it seemed like the beef with cornstarch was really sticking to the wok and the wok was kind of a mess.  I decided to add a little bit of red wine to help deglaze the pan.  It worked on two counts – the wok was in much better shape and the sauce was even richer than normal.  I think I’ll make this a permanent part of the recipe going forward.

Beef and Broccoli

  • Sirloin or top round beef, cut into thin strips (I used about 4 oz per person)
  • 2 TB cornstarch
  • 1/2 cup beef stock or broth
  • 2 TB oyster sauce
  • 2 TB honey
  • 2 TB low sodium soy sauce
  • 1 TB sherry
  • 1 head broccoli, cut into florets
  • 2 tsps canola oil
  • 1 TB chopped fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup red wine

Toss beef strips with 1 TB of cornstarch.  In a small bowl, mix together remaining cornstarch, beef stock, oyster sauce, honey, soy sauce and sherry.  Steam broccoli for 3- 4 minutes until just tender.

Heat a wok or deep pan over medium high heat.  Swirl in oil and toss in beef.  Stir fry until just cooked (about 3 -4 minutes).  Transfer beef to a bowl.

Add ginger and garlic to pan and toss for 30 seconds.  Add stock mixture and cook until sauce boils.  Add red wine to deglaze pan and stir in browned bits from pan.  Stir while sauce thickens (about 1 minute).  Add beef and broccoli and cook for 1 minute to heat through.  Serve with rice.
