Meat and potatoes

For tonight’s dinner combine the marinade ingredients of  your choice and poke holes in your flank steak with a fork to tenderize it.  Pour marinade over meat and refrigerate until ready to grill.  Grill to desired doneness.  Serve with:

Roasted garlic potatoes

  • 6 small Yukon gold or  12 small fingerling potatoes
  • 1 tsp thyme
  • salt and pepper to taste
  • 3 cloves garlic, cut in slices
  • 2 Tb olive oil

Scrub potatoes and toss in a bowl with remaining ingredients until all are well coated.  Preheat oven to 400.  Spread potatoes out in a ceramic baking dish and roast for 40 minutes, stirring once midway.  Serve with chicken or meat.

This is so easy that you can wrap presents while you watch the Ravens game and even whip up a batch of cookies!  Have a great day.
