Grill night

We have some leftover ratatouille from last week that I wanted to use up and thought it would go nicely with these grilled pork chops.  My sage plant has done really well this year so this also gives me another chance at using the herbs before I bring them inside to see how they do this winter.

Grilled pork chops with fried sage leaves

  • 1 boneless pork chop per person
  • 2 TB olive oil
  • 1 chopped shallot
  • 2 TB lemon juice
  • salt and pepper
  • 2 tsp chopped parsley
  • 15  – 20 sage leaves
  • 1/4 cup olive oil

Toss pork chops with shallot, lemon juice, 2 TB olive oil, salt, pepper, parsley and a few chopped sage leaves.  Toss remaining sage leaves with 1/4 cup olive oil in a small saucepan.  Marinate pork for up to 4 hours.  Grill about 3 minutes per side.  While grilling, fry sage leaves in olive oil until crisp (drain on a paper towel).
