Moroccan Chicken Kabobs

Tonight we had grilled chicken kabobs with cous cous.  We were very happy that my brother and his girlfriend were able to join us (they brought a birthday present for my daughter who turns 5 next week and is very happy to be stretching out the birthday festivities.)  I decided to make some more zucchini fritters because I still had two zucchini in the fridge.  Once again they proved popular and they were a nice addition to the chicken.  I flavored the cous cous with a little bit of cinnamon to highlight the kabobs.  The slightly cinnamony cous cous was even a hit with the hot dog that my daughter enjoyed.  (I made the marinade yesterday and marinated the chicken overnight.)

Moroccan Chicken Kabobs

  • 1 boneless, skinless chicken breast per person
  • 6 TB olive oil
  • juice of 2 lemons
  • 4 garlic cloves, minced
  • 3 tsp cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 1/2 tsp cinnamon
  • 3/4 tsp oregano
Cut chicken into cubes.  Combine all marinade ingredients and whisk together.  Pour over chicken and marinate up to overnight.  Skewer chicken cubes and grill until done (my husband grilled for about 10 minutes).  Serve with cous cous.
